Eat Healthy Challenge

Eating Healthy

I have to admit, my eating habits this past week were pretty pathetic.  I didn't go to the grocery store last week, and that really threw me off my routine.  I didn't have fresh fruits and veggies to make my morning green smoothies.  I didn't pack my lunches for work, so ate out a few times.  By Friday, I was feeling pretty run down.  I've promised myself that this week will be different.  I am so determined to have a better week that I am declaring this Healthy Eating Week!  Throughout the week, I will be sharing some of the recipes and strategies that keep my diet on track.

My number one trick to eating healthy is to be prepared.  If my fridge is full of fresh produce and my pantry stocked with the right ingredients, I will make good choices.  It also helps if the fruits and veggies are ready to eat.  I have a container of sliced cucumber and baby carrots on hand for when I want to have a snack while I'm watching TV.  I also have watermelon and strawberries diced and ready for my next sweet craving.

As for dry goods, I have full jars of oats, chia and flax for the week.  If you haven't guessed by now, I love chia!  Chia is chock full of anti-oxidants, fiber and omega-3 fatty acids.  The seeds expand in liquids and really make me feel full and satisfied.  Sometimes I make a basic banana chia pudding, and have tried a blueberry chia pudding (see photo above).  I have also shared the recipe for my current favorite chocolate banana chia pudding.  Yesterday, I made up a batch of the chocolate pudding and have four jars in fridge, ready to eat as a breakfast, snack or even dessert.

Later this week, I will try a new recipe for overnight oats.  I also will share a two-ingredient meal that will blow your mind (well, it blew my mind!).  My usual Travel Tuesday and Friday Favorites features will also be inspired by healthy eating.  I challenge you to eat your best this week, too!  Please share any of your favorite healthy living tips, I'd love to hear from you!
