Baked Egg Avocado

I promised you a two-ingredient recipe that would blow your mind, and here it is.  It's an egg baked in an avocado!  This simple meal is high in protein, fiber, healthy fats and nutrients.  It is also rich in flavor and quite filling.  Add a side salad or piece of fruit and you have a very simple lunch or dinner.

To make your own baked egg avocado, simple cut a large avocado in half, remove the seed and scoop out enough meat to accomodate the egg.  The first time I tried this, I didn't leave enough room and my egg dripped over the sides.  When you have a good size hole, place the avocado in a baking dish and then crack the egg into the hole.  I seasoned mine with a little salt and pepper, but you can add any other spices you like.  Then bake in an oven or toaster oven preheated to 425 degrees for about 20 minutes.  You will want to keep an eye out the last few mintues and remove it when the egg is cooked to your liking.  Then add your favorite Sriracha sauce or salsa and you are ready for a healthy and simple meal!
