The best way for me to stay on track with my diet is to have delicious and nutritious snacks on hand. While I can't seem to get enough of my trusty chocolate chia pudding lately, I wanted to try something new. Enter the overnight oats recipe! Like a chia pudding, overnight oats have a basic recipe that you can personalize with your favorite toppings and is made ahead.
Basic Recipe for 1 Serving:
- In an 8oz mason jar, combine 1/2 cup oats with 1/2 cup almond milk
- Mix and let soften overnight in the fridge.
- Top with your choice of fruit, nuts, seeds, etc.
That is the recipe in a nutshell. To add some flavor to mine, I included 1/2 teaspoon each of vanilla extract and cinnamon. I tried another with dried cranberries and shredded coconut. If you prefer soy or coconut milk to almond milk, swap it out. You can also try adding in raisins, goji berries, diced almonds or walnuts, chia seeds, flax etc. If you want the dried fruit to be soft, include it in the overnight process. If you prefer the fruit to be firm, add it right before eating. Like an ice cream sundae, you can think of endless ideas for fun toppings. Unlike the sundae, you won't have to feel guilty about eating this treat. Enjoy!
